Living in the south all my life, I suppose I have never really thought of cooking any other way.  I was raised in a small town, with very little money, and the most wonderful thing that ever happened to my two brothers, and myself, was the day the watermelon truck turned over and watermelons went everywhere.  We had a field day picking up broken melons and running home with them.  Today, all people seem concerned about is their diets.  My belief is that everything should be in moderation.
I stood at my grandmother’s knees for hours as a child, learning all the secrets to making such dishes as her cornbread dressing and fried biscuits.  I have never forgotten those secrets and have passed them on to my children and grandchildren as well, so the recipes won’t be forgotten.  A man had written on an article, regarding how bad some of these country recipes are for you and I remarked that in my youth if it wasn’t fried or full of fat, it wasn’t considered “fittin” to eat.  So be careful, do things in moderation, but enjoy your life.
